I had about 1 3/4 c lemon juice, 2 c mint leaves (that was all I could squeeze out of my herb garden), and 3/4 c sugar. Instead of still water I mixed it with sparkling water and added tequila for those who wanted it. It was very tasty. I will say that it doesn’t look as pretty if you make it ahead of time and let it sit. I made it in the early afternoon and kept it in the fridge, and by evening it was not nearly as bright green.
