About this deal

While I am no sun-worshipper, I do find the gloomy greyness of a long British winter slightly less than cheering. There were a few ingredients I couldn’t get, but used alternatives and the dish was still VERY good! We want to give you platefuls that taste like grandma's food so there are recipes for classics like Ackee 'n' Saltfish and Curry goat, and Caribbean favourites from home such as Garlic butter lobster and Trini doubles.

A really refreshing and enjoyable cookbook that I would recommend to any Caribbean/spicy food lovers.It also features a wide variety of fresh fruit and vegetables like plantain, yams, jackfruit, guava, and plenty more, making it perfect for vegan recipes. As with their first book, Original Flava, it draws on the generous tradition of Caribbean food, though its focus — or perhaps it would be more accurate to say its inspiration — is Ital cooking; the “ital” derives from “vital” and denotes the Rastafarian approach to eating, with its emphasis on fresh, unprocessed food and and its celebration of the earth’s bounty. There are recipes that are a spin on popular dishes which will have the keen meat eater licking their lips. I wish the recipes had some general cook-times listed, but while they don’t, the recipes also don’t seem like they would take all day.

I think if you’re more familiar with Caribbean cooking this won’t be a problem for you, but if you aren’t, just be prepared for it. Then use a frying pan with 1 tbsp of olive oil on medium-high heat and fry the onion, garlic and scotch bonnet pepper/chillies (all chopped) for 3-5 mins. Cook until browned, then add the scotch bonnet, thyme, spring onions and tomatoes and stir everything.Being lovers of spice and big flavours, we have enjoyed quite a few homemade dishes from from the Original Flava Caribbean Recipes From Home by Craig and Shaun McAnuff – full of authentic, delicious Caribbean recipes. So I prescribe myself the Kitchen Cure, which is to say I lose myself in cooking and eating good things full of bright flavour.

We also like to twist it up a likkle to give dishes our modern spin, so you can find recipes for Honey roasted jerk-spiced salmon, Plantain beanburgers and Banana fritter cheesecake. Think Potato and C hickpea Curry with Roti, Jerk C auliflower Wings, Coconut, Black-Eyed Pea and Sweet Potato Stew, and Plantain Cookies . We also like to twist it up a likkle to give dishes our modern spin, so you can find recipes for Honey roasted j erk-spiced salmon, Plantain beanburgers and Banana fritter cheesecake. One of my aids in fighting the grimness outside has been this persuasively upbeat book by Craig and Shaun McAnuff who are brothers from South London of Jamaican heritage.Rastafari is an expression of unity with all things, and the Ital diet reflects that through a sense of peace and togetherness with the natural world.
